Astonishing Parsley - Cilantro Smoothie!

Believe it or not, this smoothie is DELICIOUS! you just have to give it a try!
My own creation, wow!

1 banana
1 hand full spinach
1 little bunch parsley
1 little bunch cilantro
1 1/2 cup frozen mixed berries
1 - 1 1/2 cup water, depends of your blender

Tomato sauce yummy!


There is nothing like homemade tomato sauce with whole wheat pasta and Parmesan cheese ...

Chop the garlic and saute them in a saucepan on low temperature while you chop the tomatoes. I usually add the laurel leaves now together with the garlic, just shortly before adding the tomatoes. Watch out don't let it burn. I mean, you can as well just throw it in once you have poured the tomato "juice". My idea of doing it before is to give some extra flavor to the oil

Bring the chopped tomatoes in a blender and add a little bit of water to help the machine, but don't add too much water, it should be pure tomatoes. Normally this recipe calls for no water at all. I left the skin of the tomatoes on, when you peal off the skin the tomatoes will be soft and juicy enough on itself and you won't need water. I have found it a lot more work to try to peal the skin off and I don;t always have the time to do it ... like in today's case!

Blend them well

Pour on the sauce pan and allow to boil

Add the oregano and stir

When the sauce has boiled and become darker, add the tomato paste and stir. Add salt and sugar and taste. Allow to cook again for a few seconds and you are done!

Serve with Parmesan cheese and enjoy ...

Ingredients
500 grams tomatoes
4 garlic cloves
3-4 laurel leaves
1/2 Teaspoon oregano ( try and see if it needs a bit more)
2 Teaspoon tomato paste
Parmesan cheese
salt
2 Teaspoon brown sugar (this is to ease the acidity from the tomatoes)

Homemade Aloe gel

Aloe's properties are endless and the use that are given to its leaves today are just as endless as well. I like to use it to enrich my personal care products, hair care and soaps. I like to use it for homemade remedies as well. It is so good you can use it plain over your skin and experience the gigantic difference and feel how thankful your skin will be!
It is very simple to make the gel. Some of you might not like it, but it you are able to get over the stickiness and the characteristic smell of fresh aloe you will receive its enormous benefits.

First thing, rinse it with some fresh water to remove any dirt from the garden. Cut off the edges, they are very pointy.

Next, cut the skin off. if you have a big leave, it will be easier, if you have a small one you can leave the skin on. It is your own preference.

Once you have it ready, start chopping ...

and chopping ...

and more chopping ... There will be some liquid as well, don't worry, try to keep it all together and keep on chopping until you have the consistency you want.

I made this one for the exclusive use of my hair care, so I was not trying really hard to chop it the finest possible. It will be sticky but you will love the softness it gives to your skin, and even you will immediately notice the change in your hair ... specially if you are expose to the sun very often!

Hair care

For some reason my hair seems to enjoy more natural or enriched products then the regular products I buy in a store. I have curly hair, which needs lots of care, which might seem to be news to many of you with straight hair.
Yes, although curly hair looks always curly and beautiful, it requires lots of care. I have never seen anyone with straight hair having to dedicate a day of the week exclusively for hair care ... which was normal in my surrounding growing up. I remember my grandma running behind me with a pot of warm oil to pour on my hair to moisturize it. I also remember listening to statements like "to be beautiful there most be suffering" ... I very much disagree with this statement, we are beautiful because we are beautiful. (full stop). I still like to do something to my hair and skin every once in a while but it is more for the joy of it and the blessing of sitting down for a bit and relax and as a plus enriching my hair and skin.

My conditioner was 1/4 full, it seems as it was time to go and buy a new one. hmmmm. To be honest I rather stretch it by enriching it than buying something that promises something that would never do! This time, I decided to use aloe as the main ingredient. I got my homemade aloe gel and opened the fridge to see what else was there to use, think enrich, enrich, fat, moist, nutrients ...

1/4 full cream conditioner

Found some vitamin C, squeeze it with a spoon to mix better with the aloe gel

After you pour the squeezed vitamin C, add some vitamin E, I always buy the soft capsules, I like to enrich about anything with it and these ones are easy to pinch with a needle for different use

There you go, alone this mixture of aloe with vitamin C and E is powerful. You can use it on the skin or on your hair. It is RICH!. Aloe can be itchy on the skin and when you add vitamin C even more. I use this mixture to any weird thing I find on my kids skin. It kills it. I fought a bacteria on one of my daughter for months, I used anything the doctor told me, expensive creams, antibiotics, etc... the bacteria, kept on coming back. It was annoying. I began to put aloe on it and eventually aloe with vitamin C and it was gone.
Mix well

another powerful ingredient for your hair is egg. Don't worry about the smell, the end result won't smell like egg at all. I also add some apple vinegar, which is said to make your hair shine!

I thought it was a bit to liquid, so I added 2 spoons of yogurt to thicken it a bit.

Mix well. Notice it is still liquid, but a little thicker then before. Remember we will add this mixture to the 1/4 full cream conditioner we bought in the store. Begin to add half of this mixture to it and mix well.

In my opinion the consistency was still good enough to add the rest of the mixture. Mix well

Yeah! now I have a full cream conditioner!. I used it already and my hair was thankful!
If you don't have the possibility to find aloe, you can use heavy cream, and add a little bit of oil to it, you can add the other ingredients as well. There are unending possibilities! begin to play and have fun, eventually you will find the ideal recipe your hair likes the most!

Ingredients
1/2 full or 1/4 full Cream conditioner, any kind. I try to get the one that has the most moisturizing description. Please, it doesn't have to be the most expensive, this is only the base for all the goodness you will add to it yourself. It can be cheap, it most be cheap! (you can enriching right after you bought it and save the half for later, I always use a bit from it and then enrich it, it is up to you)
homemade aloe gel (most not be a specific amount)
Vitamin C ( I used 3000 mg)
Vitamin E ( I used 5 400 mg)
1 egg
1 spoon Apple Vinegar
2 spoon yogurt

Use as normal. After some days it might smell like medicine, those are the vitamins, no worries!

Carrot Salad Morningstar Inspiration

The other day we were invited to a garden grill. We were told to bring something. Ok, what to bring, what not to bring became the question. I thought for about an hour, opened the fridge, close the fridge, open it again and again, no idea!. It was then, when I was remained about a carrot spread/salad from my dear friend Sarah. I didn't have her recipe but I had a slightly idea of how to do it. The truth is, it became something totally different, still exciting though, and I LIKE it. She did end up giving me the recipe, but it was already too late, I was already coming back with an empty bowl, which could only mean that everyone enjoyed it just as much

In a large bowl, shred together the carrots and the apple. Leave the skin on if you like. Chop the onions and the garlic. Mix together.

add the chopped spinach and the walnuts. Mix together.
If you have some dates, you should add them now. It adds a special sweet touch, I didn't have any today.

On a separate small bowl, add the oil, the balsamic vinegar, the apple sauce and the
salt and pepper.

Mix well

Add the oil mixture to the carrot mixture and stir until it is well spread.

You can have just like that, and it is already delicious. I like to serve it with some chunks of feta cheese.

Another idea is to mix it together with any left over macaroni or rice to make a new pasta or rice salad. I had left over macaroni from yesterday, it was good!

Ingredients
4 carrots
1 medium red onion
4 garlic cloves (less if you don't like it so much)
1 hand full spinach
1 apple (sweet)
1 hand full walnuts
1 hand full dates (if you like it sweeter)

Vinaigrette
1/2 cup olive oil
1 spoon balsamic vinegar
2 spoon apple sauce
salt and pepper to taste

Good Morning Breakfast!

This is like the Caribbean dream vacation breakfast, packed with fresh ripe fruits, some cinnamon for extra taste and yogurt!! yumm!
Although to me sounds super Caribbean, it actually is Swiss, that's right! Swiss!. The fresh homemade Swiss muesli is nothing else but apples, oats and yogurt! simple and delicious!
My husband introduced me to this awesome breakfast shortly after we were married. We were in Freiburg, a small town at the south of Germany in the boarder between France and Switzerland. I really didn't like it at first, I was not very much into plain yogurt, and even that I grew up in the tropic, eating fruits was also not my thing...! Eventually I began making this for my husband, the more I made it, the more I started to enjoy playing with fruits, I started to add my special touches, he likes it still, even though I have completely transformed it ...

Gather all the fruits you want to use, chop them in nice comfortable biting pieces. Bring them together in a large bowl, sprinkle some cinnamon and mix. You can put as much cinnamon as you like.

Add some oats. The oats allow you to use any fruit without the yogurt going curd. It seals the fruit.

Mix together

Add some yogurt, enough to hold the whole mixture together evenly

Mix

Sprinkle some more cinnamon on top and some whole almonds as decoration. It gives a nice touch!

Peaches
Pineapples
Strawberries
Mango
bananas
grapes
papaya
raspberries
blueberries
cinnamon
Plain Whole milk yogurt
oats (old fashioned)
whole almonds

You can use all of these fruits, but you can also use the ones you have at home right now.
Sometimes I only have apples, then that is what I use.

Tortilla Espanola

For those of you who had been to Spain, you might recognize this potato egg cake served on a nice and crunchy french baguette. It is always one of the options in any Tapas restaurant all throughout Spain. Spanish people like to cook with saffron. This plate, is made with saffron, famous paellas are also seasoned with saffron. It is a spice very rich in flavor.
I grew up in Venezuela, exposed to a variety of different cultures that made our Venezuelan cuisine into a mixture of all of them. It is very common to find a Tortilla Espanola served in any Venezuelan home as a light lunch or a side dish for dinner. We don't use saffron which makes it even easier and less expensive as saffron can be an expensive spice and hard to find in some places!
I used 3 of these potatoes. It can be any potato, if there is one sort you like more in particular, feel free to use that one!
I let the potatoes cool down. Most of the time I cooked them in the morning and set them aside until it's time for cooking ... Once they have cooled down they are really easy to cut in pieces, when they are still hot they fall apart. Place the cut potatoes in a round cake form. Previously oiled, with butter or spray, whichever you like best.
On a saucepan, saute some onions until they are transparent, don't let them burn otherwise they won't look so pretty inside the mix
On a large bowl, place your eggs and some salt and some pepper, it is easier to add the seasoning now so the eggs will absorb it well. Mix in the onions and stir.
Add the egg-onion mixture on top of the potatoes. Spread it thoroughly.
This is normally cooked on a large saucepan, I always found it difficult to turn it around. It was always fun to watch my mom as she "played" around with it. There was always a mess! sometimes little mess, sometimes big mess ...
So I decided to use a cake form instead, this way I don't have to learn to jiggle around and clean up a big mess and I use less oil.
If you are following what I am saying, you might have noticed that there is some egg leaking out of the cake form from the bottom, hehehe you are right! simply cover the cake form with some foil and you will be fine!

There you go! nice tortilla espanola for kids and babysitter while mom and daddy go out on a date!

Ingredients
3 large potatoes
1 onion (red or regular)
12 eggs
salt
pepper

You can adjust the amounts, again, there is no right or wrong! just enjoy and play with it until you feel confident!

Oh Paprika!

I found a gigantic Red Pepper the other day in the supermarket, It was so beautiful. I normally never use a whole pepper for any meal, while my husband always does. This time I thought ok, here we will have pepper for a couple of meals!. To my surprise I ended up using the whole of the largest pepper we have ever bought!
I cut the top of the pepper, I was trying to get some inspiration, what am I going to do with this beauty?!
It really was beautiful! I cleared the seeds away and thought, hmmm stuffed pepper! sounds good. I had recently done stuffed pumpkin, it turned out really good, so this time I wanted to do something different. I decided not to cook the vegetables inside ...
I gathered onion, zucchini, apple (most of the food we buy has some sort of sweetener in it, and I really enjoy a sweet point on my food, but as I can not use sugar I am using apples on everything), carrot, dates, spinach, walnuts. Chopped it all and mixed it together in a large bowl.
it needs some PARMESAN cheese, by now you might have notice, we do like Parmesan cheese over here!
and some black pepper. I think I didn't have to necessarily upload this picture, but I thought it was cool and I really like it!
Fill the pepper with the vegetable mix, put the top on top!
I had way more vegetable mix then what I needed so I decide it to roasted together with the pepper on the same foil.

Yumm!
by now you might have realized that I forgot something ... hmmm ... salt!
My husband has the best solution for this cases ... soy sauce! it really made the trick! I think even with adding salt to the mix on the first place, the soy sauce is a nice add.

Ingredients
1 large Pepper
1 medium red onion
1/2 zucchini
1 apple
1 carrot
3 dates
1 hand full of spinach
1 hand full of walnuts
1/2 cup Parmesan cheese
salt
soy sauce

Remember, there is not such a thing as right or wrong on this one, you can add all sort of different spices you enjoy. I think it is a great idea and it gives you the possibility to serve a nice looking plate of delicious vegetables!
