Canoe Potato

Oh my dear! it is almost time for lunch and I have no idea what to make for today! I opened the fridge and found a bag of potatoes, hmmmm, What to do! Rinse and scrub as many potatoes as you want to use, then bring to boil and cook through until soft, but not to soft, I always use a fork to measure how hard or soft they are. Do not let them become too soft or they will crumble. the best is to let them aside after they have reached the consistency you desire and cool down a bit ...
Then ... then, you cut them in half and with a spoon you crave them as little canoes
Bring the potato filling into a bowl and mix with Parmesan cheese, spinach, basil, salt and black pepper
Filled the potato canoes with it and sprinkle some more Parmesan cheese on top, there can never be too much Parmesan cheese on anything!
Bring to the oven and baked for 20 minutes
Serve as you like!
You can also surprise your kids. My kids love to eat the "eyes" of all the funny faces I make for them with the food I cook. All I want is that they EAT!!!

Ingredients
Potatoes
Parmesan cheese
Spinach
Basil
Salt
Black Pepper

For this recipe I didn't really used measurements, I went with the feeling!. It is more to give an idea of want you could do on a day you don't know what to do! be creative, try it and remember to write down your own measurements, you could even help me out by writing a copy of your version as a comment.
